  • 4 oz. jar artichoke hearts, chopped

Dressing

  • 1 cup olive oil
  • salt to taste
  • Freshly ground black pepper to taste
  • 8 cloves garlic, minced (adjust to preference)
  • cup Parmesan cheese, grated
  • 1-½ tablespoons lemon juice, freshly squeezed
  • ¼ cup fresh parsley, chopped

Instructions

  • Heat the chicken broth in a saucepan until boiling. Add the bay leaf and the sorted, rinsed lentils. Reduce heat and simmer for approximately 20 minutes, or until the lentils are just tender. Add a little water if needed to keep the lentils submerged while cooking.
  • While the lentils cook, prepare the other salad components. In a medium-sized mixing bowl, combine the chopped carrots, sliced or slivered almonds, and the chopped artichoke hearts.
  • For the dressing, combine all dressing ingredients (olive oil, salt, freshly ground black pepper, minced garlic, Parmesan cheese, lemon juice, and chopped fresh parsley) in a jar with a tight-fitting lid. Shake vigorously until all ingredients are well combined and emulsified. Set aside.

We have a strong love for garlic, which is why this dressing calls for a generous amount (over half a bulb). However, please feel free to adjust the quantity of minced garlic based on your personal preference. Keep in mind that “half a bulb” is quite a bit of garlic!
